Tieguanyin, the “Iron Goddess of Mercy”, is one of China’s best-known oolongs. This light-fragrance (qingxiang) style is only lightly oxidized and rolled into tight, dark green pellets that open slowly in hot water. Expect a floral, orchid-like aroma, a smooth and gently sweet cup, and a pale golden-green liquor.
Gaiwan: 6–7 g per 100 ml, water at 95 °C (203 °F), rinse once, then 20 seconds for the first infusion, adding 5–10 seconds each round; 6–8 infusions.
Mug: 3 g in 300 ml of 95 °C water for 2–3 minutes; resteep 2–3 times.
