Taiping Houkui is one of China’s famous green teas, from the Taiping area near Huangshan in Anhui. Its large leaves are pressed flat by hand, so each one can be as long as a finger. In a tall glass the leaves unfold slowly and stand upright. The cup is clear and pale green, fresh and mellow, with an orchid-like aroma and very little bitterness. This is the Nie Jian (“pinched tip”) grade.
Gaiwan: 3–4 g per 100 ml, water at 80–85 °C (176–185 °F), 40 seconds for the first infusion, adding 10–15 seconds each round; 3–4 infusions.
Mug: 3 g of whole leaves in a tall glass or mug with 250 ml of 80–85 °C water; drink after 2–3 minutes and top up with hot water.
Ingredients: Green tea. Storage: Keep sealed, cool and dry, away from light and strong odors.
