Longjing, or Dragon Well, is one of China’s best-known green teas. The leaves are pan-fired and pressed flat, which gives a soft chestnut-like aroma and a clean, gently sweet cup with very little bitterness when brewed with cooler water.
Gaiwan: 4–5 g per 100 ml, water at 80 °C (176 °F), 30 seconds for the first infusion, adding 10 seconds each round; 3–4 infusions.
