Raw (sheng) pu-erh is Yunnan tea pressed into cakes without fermentation. Young cakes taste brisk and fragrant with a lingering sweetness, and many people keep them for years as the flavor deepens.
The 357 g cake is the traditional size. Pry off 5–7 g with a pu-erh knife, rinse once, and brew in a gaiwan or small teapot with water around 95 °C (203 °F), starting with short 10–15 second infusions.
Ingredients: Pu-erh tea (raw). Storage: Keep the cake in its wrapper in a cool, dry place away from light and strong odors.
We haven’t tasted this batch yet; tasting notes describe this style of tea in general.
